1/8 cup parsley
1 tomato
3 garlic cloves
1 lemon
1 cup mozzarella cheese
3 strips bacon

Method
Preheat oven to 375 degrees. Place chicken breasts, skin side down, in a 9 X 11 pan. Dice tomato, chop parsley, cut bacon into 1/2 inch squares and add on top of chicken. Chop up garlic and add to top of chicken. Cut lemon in half and squeeze lemon onto chicken. Sprinkle cheese over chicken, cover pan with foil, and bake 45 minutes. Uncover foil and bake another 12 minutes or until cheese is golden brown.

How about seasoning a chicken, either pieces or a whole bird.
Roast in oven about 1 hour for a whole bird and if cut up about half that time.
Roast some potatoes at the same time.
Nice green salad
Some broccoli or green beans.
Dessert, a little chocolate something, brownies would be nice. Or some fresh fruit with a slice of pound cake and a drizzle of chocolate sauce. Or if you feel adventurous a chocolate mousse. Wait, save that for your next date and have her help...

I have a great easy recipe for a first time chicken parmesan, it is very easy. You can go buy a pack of boneless and skinless chicken breast, seasoned or plain. If it is plain season it with some garlic powder and maybe some italian seasoning. Bake the chicken with a little butter at the bottom so it won't dry out or stick to the pan, depending on the sizes will depend on the time. When the chicken is done baking poor a jar of spaghetti sauce in the pan just enough to cover right above the chicken, then add mozzarella cheese to the top and bake it until the cheese is melted all the way and the sauce should be bubbling. Add a side salad and garlic bread or bread sticks to it, and you have a very easy meal. If you were looking for something lighter you could always buy boneless chicken breast and a small jar of italian dressing to make a grilled chicken salad. Cut the chicken up into strips or chunks put it in a skillet poor out the as much of the oil from the Italian dressing as you can and poor the dressing into the pan covering only half of the chicken. Stir it up while it cooks down and serve it over you salad.

I got you covered, dude. Chicken Fricasee. Easiest dish with a ton of flavour. I know, big fancy ass name.

What you'll need: 2 servings of basmati rice; 1 carrot; 1 zuccini; 1/2 an onion, minced; butter; 4-6 chicken legs or thighs, with skin and bones (not joking - most flavourful parts of the chicken...the lady will be impressed); a bottle of dry, cheap white wine; chicken stock; parsley; thyme.


1. You start by preheating your oven to 375F. Saute 1/2 an onion minced in butter in a small oven proof pot. When it gets soft, you season with S&P. Then you add your basmati rice and saute for a minute. I don't do exact measurements (don't know any chef who does), but you'll want to add 2 1/2 times the amount of water that you did of rice (for 2 people, 3/4-1 cup should be sufficient) and bring to a boil. Once that happens, you season with S&P, put a lid on the bad boy and throw it in the oven for 8-10 minutes. You can fluff it up and then let it sit and reheat it quickly on a very low heat when necessary.

2. Meanwhile, you take some chicken legs and sear them, in an oven proof pan. When that's done, you make sure they're skin side up, dust with flower, and turn the oven on full whack for about 3-6 minutes or until you see the flour browning.

3. Pull it out, deglaze with half a bottle of white wine (or the whole bottle, what the hell) and when that reduces, you pour in about 1.5 ltrs of chicken stock, throw in a bay leaf and some sprigs of thyme. Bring that to a boil, turn the temp down to low, and cover with the lid tilted to 45 degrees to let some steam out. Let it go for about 1-1 1/2 hours or until the chicken just falls away from the bone.

4. Cut your carrots and zucchini into quarters and then lengthwise 2-3 times. Bring a pot of salted water to the boil, and cook until tender. Toss with olive oil, salt and pepper.

5. When the chicken is tender, you serve it up on one side, the veggies on the other, and then you take a small ramekin or bowl and jam the rice into it. Turn over the bowl and serve the rice on the other side beside the veggies. It makes everything look pretty and chicks dig that. Especially given that she doesn't how easy it was.

6. Top with the parsley and some of the cooking liquid, and then you're laughing.

If you really want to get lucky, melt some chocolate in a double boiler, take it off the heat, whip some heavy cream and fold the chocolate into the cream and serve with berries. You can add alcohol to your chocolate mousse - JUST MAKE DAMN SURE YOU'VE TAKEN THE CHOCOLATE OFF THE HEAT. I forgot the most important part, but I'm sure you know where the drug store is, right? I like this dish because it doesn't need a babysitter. Once you've got the prep done and the chicken simmering on the stove, you can chat up your lady love until it's ready and putting it together takes almost no time. You'll look like a chef who has slaved for hours. Keep your stick on the ice, eh.

PS - Ignore anyone who tells you to use chicken breasts. They're big, but compared to the cheaper cuts of chicken meat, they have ZERO FLAVOUR. Chicken breasts take little time to cook, but for the 1 1/2 hours those thighs or legs are sitting on the stove by themselves, it's totally worth it. If you do this recipe, you might just end up with the breasts you really want. Forget the chicken ones.

roast a small chicken super easy...make sure you remove the gizzards and other things...they are normally a bag stuffed inside the chicken..I use them but,you might want to discard them. season the chicken well with salt and pepper...some people suggest buttering the outside as well but ,the skin has a lot of fat and will be fine.Place chicken in a pan that in deep enough to catch the juices.place in an oven that has been pre heated to 450 .reduce heat to 350(the initial high heat will help brown and crisp the skin) bake for 1 hour 15 min. ...remove from oven cover with foil and let rest 15 mins before carving.

sides...I have 3 words for you UNCLE BENS RICE you can find it in the pouches that go in the microwave for 90 seconds...or in the boxes...get one that is chicken flavored....(if you can make ramen you can make these)

Packages salads...you can get lettuce mixes ..the Italian mix it nice and colorful ...get 2 dressings one that is a vinaigrette...and one that is cream based such as ranch( I use KENs a lot)

if you want bread...get a loaf of french...pop it in the oven(for 7-10 mins) while the chicken is resting and you are prepping the Rice.

New England Pot Roast...
Brown meat on all sides in a Dutch oven (big pot). Spread prepared horseradish over and pour in 1 cup of water. Cover and simmer for about 2 hours.
To the pot, add chunks of carrots, potatoes, onions, then whole garlic cloves.
Simmer for 1 more hour.
